About this coffee :
This coffee, produced by small-scale farmers from Alto del Obispo, San Agustin (Huila), comes from farms averaging 3 hectares, located at altitudes between 1,700 and 1,800 meters. The producers are part of Asobombo, a group founded to ensure fair and sustainable prices. They handpick ripe cherries, depulp them using small hand-crank depulpers, and then ferment the beans for approximately 30 to 34 hours. After fermentation, the beans are washed in clean water while still in parchment and dried, typically in parabolic dryers.
The Pink Bourbon variety, initially identified in the Huila region of Colombia, was once thought to be a hybrid of Red and Yellow Bourbon. However, recent research has revealed that Pink Bourbon is not actually a Bourbon but rather originates from ancestral Ethiopian varieties. It offers exceptional quality, comparable to prestigious varieties like Geisha. Known for its flavor potential and enhanced disease resistance, it is highly sought after by professionals and consumers alike.
